Uses: This type of mixer typically does not have interchangeable attachments; however, it can still be quite versatile. Most commonly used for mixing bread dough, from very stiff dough with low hydration or a high hydration dough such as ciabatta, this style of mixer can handle various types of dough well. In some cases you can find a bakery using a spiral mixer to blend together pie dough, mixing scones, and biscuits. So even though a spiral mixer is designed for a certain purpose, bakers will get creative and utilize it for other uses as well.
